I went to Pub BreWskey in Old Montreal to get their poutine called La Bisonnière.
As always, I made a list where to go during La Poutine Week, and I knew it's closed on Mondays, I went there a bit after they opened today, Tuesday.
I was the first person to come in.
When I ordered La Bisonnière, the bar staff and chef said I was the first one to order the poutine because they're closed on the 1st day of La Poutine Week.
The 2 staffs were very talkative and friendly, and they even explained me the process of the cooking.
When the poutine was brought, they took the photo of the poutine and I also got to be in the photo with the chef :D
They even brightened the lights for me to be able to take photos.
The blackboard in the bar said, "bison + caramelized onions + beer gravy + cheese curds + yellow and sweet fries."
La Poutine Week page had more detailed description about the dish.
"A mix of yellow and sweet potato fries, cheese curds, covered with a house veal & beer gravy, topped with caramelized onions, succulent pulled Bison braised in dark beer, and finishing with beer fried shallots."

It's a very large poutine.
A bit blurred photo, but I could see regular potato and sweet potato (orange) fries underneath, and I was really surprised how much meat I was getting for this poutine.
They said that bison had been braised since 9:30 PM last night (Monday), and the meat was actually soft and juicy, and it didn't have meaty odor which might be thanks to the beer and very moist.
The left was yellow potato and the right was sweet potato.
It tasted like brisket with mashed potato when I had the bison with yellow potatoes.
And with sweet potatoes, I could taste more of the saltiness, juicy bison meat and sweet caramelized onions, and I liked sweet potatoes more with the bison since regular potato was a bit overwhelmed by the large chunks of flavorful meat.
Fries were crispy outside, and the inside was moist and soft, and they're not greasy at all.
Cheese curds were medium size and though many were covered in the warm gravy sauce, they maintained the squeakiness.
Fried shallots added light crispy texture and green onions on the top made the poutine subtly refreshing.
Their phone kept ringing and the schedule book was filled, but still they took care of me and other customers evenly.
No wonder they're popular and busy because of the great service, food and craft beer, and I felt welcomed and was comfortable though I was alone.

お店に入ると私が1番乗りだった。
La Bisonnièreを注文した時、バーのスタッフとシェフが私が最初にプーティンを頼んだ
人だと言っていた。（プーティンウィークの初日は定休日だったため）
2人のスタッフはとても気さくで話しやすく、調理方法も説明してくれた。
出来上がったプーティンの写真を撮り、私もシェフと一緒にプーティンを持ち記念撮影に
参加させてもらった。
また、写真が綺麗に撮れるように電気を明るくしてくれるなど、至れり尽くせりだった。
バーの黒板には「バイソン＋キャラメライズド オニオン＋ビール グレービー＋チーズ
カード＋イエロー&スイートポテト フライ」と書かれていた。
プーティンウィークのページにはもう少し詳細に説明が載っていた。
「イエロー&スイートポテト フライ、チーズカードに自家製の子牛とビール入りの
グレービーソースをかけ、キャラメライズド オニオン、黒ビールで煮込んだジューシーな
バイソン、ビール入りの衣を付けて揚げたエシャロットを乗せた」ものらしい。
かなり大きなプーティンで、器の下に沢山のジャガイモとサツマイモのフライが入って
いて、このプーティンに入っているお肉の量にびっくりした。
お店の人がバイソンを昨晩（月曜）9時半から煮込んでいると言っていた通り、確かに
お肉は柔らかくジューシーで、ビールのお蔭か肉の臭みもなくしっとりとしていた。
ジャガイモと一緒にバイソンを食べると、ブリスケットとマッシュポテトを食べている
ような感覚だった。
サツマイモと合わせて食べると、塩気、ジューシーなバイソン、キャラメライズされた
甘い玉ネギの味がより一層引き立ち、私はサツマイモと食べるのが好きだった。
普通のポテトは、大きくて味がしっかりしたお肉に負けている気がした。
ポテトの外側はサクサクし、内側はしっとりと柔らかく、油っこさは全くなかった。
チーズカードは中くらいのサイズで、温かいグレービーソースに埋もれていたものも
歯ごたえが残っていた。
揚げたエシャロットは軽くサクッとしていて、ネギはこのプーティンをいくらかさっぱり
した味にしていた。
店内の電話が何度も鳴り、スケジュール表も埋まっていたけれど、私や他のお客さんを
平等に対応していた。
丁寧な接客、美味しい食べ物とクラフトビールがあり、このお店が人気の理由が分かった
気がする。
私は1人で行ったけれど快く迎え入れてもらえ、居心地も良かった。
