Doughnut Dough Fries From Chez Boris
Chez Borisのドーナツ ドウ フライ

I went to Chez Boris, which is a cafe famous for doughnuts.
Beignes (= doughnuts,) coffee and tea menus.
They're making droughts by hand, and the cutter on the left side was fascinating.
It's like a handy ravioli maker; when you roll the pin, the metal rolls and cuts the flattened dough into doughnuts shape, then to punch the center dough before frying.
There's a counter and I ordered Poutine Week's poutine and showed the wrist band to get 15% off.
(Because Chez Boris is one of the restaurants that I can use the "coupon" just by showing it.)
They don't serve poutine as a part of menu yet they do during La Poutine Week.
To make it even better, it's not a savory potion but dessert and sweet poutine.
This year, they're serving "Doughnut Dough Fries," which is literally fried doughnut dough shaped into skinny shape.
I have no idea why the location show "MD, Baltimore, USA" in the post...
Doughnut Dough Fries
There're doughnut fries, ricotta cheese as cheese curds, caramel as gravy sauce, and diced peaches.
The doughnut fries were made to order and so crunchy that the fork didn't go through without breaking them, so I mostly ate it with my hand.
The doughnuts had very subtle cinnamon scent, and the inside was soft.
Ricotta cheese was airy and sweet like condensed milk, but it could have been because of the peach compote (or canned peach).
Caramel sauce was sweet yet also had some bitterness and the whole dish was well-balanced with various flavors and textures.

普段はプーティンを提供していないけれど、プーティンウィークの期間のみこのお店でも
プーティンが食べられる。
さらに良いことには、食事系の塩っぱいプーティンではなく甘いデザートプーティンが
出されている。
今年は「ドーナツ ドウ フライ」というもので、ドーナツ生地を細くカットしたものが
使われている。
手作りドーナツに使われていたカッターは、とても興味深かった。
ラビオリを作る時に使うようなカッターで、棒を転がすと金属の部分が伸ばした生地を
ドーナツ型にカットし、揚げる前に手で中心をくりぬいていた。
カウンターでプーティンウィークのプーティンを注文し、リストバンドを見せて15％割引
してもらった。
（Chez Borisは割引対象店舗の1つなので、バンドを見せるだけで値引きされる。）
最初に見た時はプーティンにそっくりだと思ったけれど、甘いシナモンの香りがした。
ドーナツ フライに加え、チーズカードに見立てたリコッタチーズ、グレービーの代わりに
キャラメル、そしてカットした黄桃が入っていた。
ドーナツ フライは注文を受けてから揚げていたのでとてもカリカリしていて、フォークを
刺そうとすると折れてしまい、ほとんど手で食べた。
ドーナツはわずかにシナモンの香りがあり、内側はふわっとしていた。
リコッタチーズは甘くて軽い食感で、練乳のような甘さがあったけれど、これはピーチ
コンポート（もしくは桃缶）の甘さだったかもしれない。
キャラメルソースは甘かったものの少しだけ苦味があったので、様々な味や食感がある
バランスのよいプーティンだった。
