We went to "Super Tacos," a Mexican food truck, the other night, and I tried their enchiladas for the first time.
Enchilada is a rolled tortilla with fillings like meat, cheese and vegetables and covered with sauce and cheese.

I could choose the meat (beef, chicken or pork), so I chose beef, and for the sauce, I chose green.
Green sauce usually contains tomatillo, onions, garlic and chili power, and it's not spicy but refreshing. (I think.)
Red sauce is chili, garlic and onion powder and spices, and I feel this sauce has more flavors than green sauce.
They had mole, which consists of many spices, dried fruits, nuts and dark chocolate, but I'm not a big fan of mole because of the unique flavor, but I just might not have had a good one yet.

They packed in a disposable lunch box tray, and there're 3 enchiladas with green sauce and queso fresco, a fresh cheese similar to feta but I think queso fresco is lighter and more fragile.

There're Mexican rice and refried beans.
The rice was seasoned well and the beans were mostly mashed but some still had some texture.

The enchiladas were filled with beef steaks while I thought it's ground beef.
I think they used the same meat that they use for tacos, and it's a little bit hard to cut the meat with plastic utensils since the beef was quite large and chewy.

Green sauce was light, refreshing, and a bit sour, and queso freso was a bit stinky like goat cheese.
Maybe next time I'd try red sauce or even give it a try to mole.

久々にメキシコ料理のフードトラック「スーパータコス」に行き、エンチラーダを初めて

食べた。
エンチラーダは筒状のトルティーヤに肉、チーズ、野菜などの具材を詰めて、ソースや
チーズをかけたもの。

牛、鶏、豚から選べたので牛肉を選び、ソースはグリーンを選んだ。
グリーンソースはトマティヨ（青トマト）、タマネギ、ニンニク、チリパウダーが入って
いて、辛くはなくさっぱりしていると思う。
レッドソースはチリ、ニンニク、タマネギ粉末が入っていて、グリーンソースよりも
色々な味がする気がする。
多数のスパイス、ドライフルーツ、ナッツ、ダークチョコレートを使ったソースのモレも
あったけれど、ユニークな風味が苦手なので選ばなかった。
（もしかしたら美味しいモレを食べたことがないだけかもしれない）

使い捨てのお弁当箱にはエンチラーダが3個入っていて、グリーンソースとケソ フレスコが
かかっていた。
ケソ フレスコはフレッシュチーズでフェタに似ているけれど、フェタよりも軽くもろい
ように感じる。
メキシカンライスは味がしっかりついていて、リフライドビーンズはほぼすり潰して
あったけれど、食感が残っているものもあった。

エンチラーダには牛挽肉が使われているかと思ったけれど、牛肉ステーキが入っていて、
タコスに使うステーキ肉を包んでいたのだと思う。
プラスチックのフォークとナイフでは牛肉が切りにくかった。
グリーンソースはサラッとしてあっさりし、少し酸味があった。
ケソ フレスコはヤギ乳のような臭みが少しあった。

次回はレッドソースかモレソースで食べてみようと思う。
