Chocolate Chip Walnut Cookie From Levain Bakery

One of our friends told me that she had the best cookies ever from Levain Bakery back in winter, and I'd been procrastinating about going there.
Some of the reasons were they close early, at 7 PM, and the shop is very small and famous for a long queue.
About the bakery, it's founded in 1994 by Connie McDonald and Pam Weekes who weren't in baking industry but they both trained for the Ironman and started discussing creating the world's best chocolate chip cookie.
In 2000, they opened a second bakery in Long Island after several years of successful business.
The name "Levain" is a French term for leavening agent from flour, water and yeast mixture, and also means sourdough.
Today, the weather was finally nice that I can call it "Spring has come" and I decided to go there with a hope there wouldn't be a long line as it's a weekday afternoon, though I was wrong.
When I got there at 2:20 PM on Thursday, there're about 10 people awaiting outside.
6 minutes later (at 2:26 PM), I was standing by the door, and it's very hot since the heat from the oven was coming out as they're baking constantly.
There're movable racks with cookie sheets holding dough balls (cookies and breads), and the cookie dough was obviously large and looked like a halved baseball.
I took this photo using a zoom function from the "Do not cross the counter" note, where only employees are allowed to go in.
At 2:35 PM, I could place my order. They had 4 kinds of cookies, and I got Chocolate Chip Walnut Cookie and Dark Chocolate Chocolate Chip Cookie for 1 each.
When I received the cookies, they're still warm so I decided to walk to a little park at 72nd street station.
The line was even longer at this point.
Chocolate Chip Walnut Cookie
The surface was golden brown, rough, and rocky, and some chocolate chips were peeking out.
This cookie was about same size as my palm (9 x 9cm/3.54 x 3.54 inch) or even larger, and the height was about 1.5 - 3cm/0.6 - 1.2 inch).
And this cookie was ponderous.
<Note>
They don't let any pet beyond the door, so if you're walking dogs, for example, it'd be hard to buy cookies unless you have someone who can watch your pet(s) while in the shop.
The stairs are steep and the width can hold 2 adults the maximum, and the shop itself has a limited space (maybe about 3.31㎡/36 ft2 for the eating space), so it seemed difficult to bring in and out baby cars when I saw a customer had one.
Items are listed on the HP and to avoid making the line long, it'd be considerate of you if you know what you're going to get beforehand.
They accept credit cards, except Discovery.

The surface and the bottom were crispy and also crunchy, but the inside was very soft and gooey with lots of melted chocolate chips.
There's some chunks of walnuts and they're crunchy and added some nutty flavor but the chocolate flavor was so strong that unless I really focused on finding the walnut flavor, it's really hard to notice them, so if you're not a fan of cookies with nuts, I think you'll still enjoy this.
(When it's cold, I could tell the walnut flavor much clearer.)
While I was eating, the paper was soaked with oil and my hands got very greasy, and I could tell this cookie was really oily.
Though it's cooled, the chocolate was still velvety and the inside was moist, and the outside was even crispier.
I left about 1/3 of the cookie overnight, and I saw the center looked half raw as it's very wet, and to be honest, when it's completely cooled, it's not that tasty but oily.

友人がルバン ベーカリーのクッキーが今まで食べた中で1番美味しいと冬に聞いていたの
だけれど、19時と早い時間に閉店し、店舗がとても小さく行列があることで有名なので、
ずっとお店に行くのを先延ばしにしていた。
このベーカリーは1994年にコニー・マクドナルドとパム・ウィークスが設立した。
当時2人は菓子製造とは違う職業に就いていたけれど、アイアンマン（トライアスロン）の
トレーニングを一緒にしていて、世界一美味しいチョコレートチップクッキーを作り出す
ことを考え始めた。
事業が成功した数年後の2000年、ロングアイランドに2号店をオープンさせた。
店名のルバン（levain）はフランス語で小麦、水、イーストの混合物から生まれる膨張剤を
指し、サワードウ（酸味のあるパン種）としても知られる。
今日はやっと「春が来た」と呼べる良い天気だったので、平日の午後なので列がない事を
願いながら行ってみたけれど、願いは叶わず。
木曜の14時20分に着くと、お店の外には10人ほどが並んでいた。
6分後（14時26分）、入り口のドアに立っていると、常時クッキー等を焼いているので
オーブンの熱でとても暑かった。
可動式の棚にはパンやクッキーの生地が並べてあり、遠くから見てもクッキー生地の
巨大さは明らかで、野球のボールを半分に切ったような大きさだった。
写真は「ここから先は従業員以外立ち入り禁止」と書かれた紙が貼ってある所からズーム
機能を使って撮影。
注文できたのは14時35分。 クッキーは4種類あり、チョコレートチップ ウォルナッツ クッキーとダークチョコレート
チョコレートクッキーを1個ずつ買った。
クッキーまだ温かかったので、72nd ストリート駅にある小さな公園で食べることにした。
お店を出た時、列は更に長くなっていた。
チョコレートチップ ウォルナッツ クッキー
表面はきつね色に焼けていて、ゴツゴツしていて、チョコレートチップがところどころに
見えた。
クッキーは手のひら（9x9センチ）かそれよりも大きいくらいで、1.5〜3センチの厚みが
あった。
また、かなりずっしりとした重さがあった。
表面と底はサクサク、ザクザクした食感があり、内側はとても柔らかく溶けたチョコ
レートチップが沢山入っていた。
ウォルナッツ（クルミ）の欠片が入っていてカリッとした食感と、ナッツの風味を足して
いたけれど、チョコレートの味がとても強かったので、ウォルナッツの味を意識して探さ
ない限りは気がつかないような味の強さだった。
なので、ナッツ入りのクッキーが苦手な人でもこのクッキーは食べやすいと思う。
（冷めてから食べると、クルミ独特の風味がはっきり分かった）
食べている間に包み紙に油が染みてきて手がギトギトになったので、かなり油分も多めの
クッキーだと分かった。
冷めてからでもチョコレートはとろっとし、内側はしっとりしていて、外側は更にサク
サクした食感が強くなった。
3分の1程度を一晩経ってから食べてみたのだけれど、中心は半焼けかと思うくらいとても
水っぽく、正直完全に冷えてから食べるとそこまで美味しくはなく、とても脂っこいだけ
だった。

ペットはドアより先に入れないので、例えば犬の散歩中に立ち寄る場合は、犬と一緒に
外で待っていてくれる人がいない限りは難しい。
階段は傾斜があり幅も大人2人立つのが限界で、イートインのスペースは二畳（3.31㎡）
ほどしかないので、ベビーカーの出し入れは大変そうだった。（実際に見た）
HPに取扱い商品が載っているので、行列を伸ばさないためにも予め何を買うか決めて
おくのが良さそう。
