Nobu New York (NYC Restaurant Week)

I've been interested in Nobu New York for a while but as it's quite expensive and I've heard to make reservation is hard, I had never got a chance to try the Japanese food there.
When my husband made a reservation for lunch, the earliest they had a room for us was a week later than we had anticipated.

Nobu New York is set up by Nobuyuki Matsuhisa, who trained for 7 years at Matsuei Sushi in Shinjuku 2-Chome, that is closed now, he moved to Peru to open a Japanese restaurant, 3 years later worked in Buenos Aires, and then later opened his own restaurant in Alaska but it's burned down.
In 1977, he worked at Mitsuwa and Osho in Los Angels, in 1987, he opened his restaurant "MATSUHISA" in Beverly Hills, and after being invited by Rober De Niro, he opened Nobu New York in August, 1993.

We got there before our reservation time but they let us seat at a table, which was very unstable and my husband had to step on one of the legs to hold.
When the menus were brought, a waitress removed the cover of the chopsticks.

Menu

There's a mark on the menu and it's a person cleaning a fish.

Black Cod Miso on Limestone Lettuce

Over 2 pieces of limestone lettuce, there're 2 cuts of black cod with miso.
There're crispy pieces which seemed to be fried wontons over the fish, and they must have been freshly fried as they're warm.
The cod was moist, miso sauce was sweet and salty, and it's fragrant as it's grilled.

Assorted Sushi
I asked for no wasabi, but when it's brought, every single sushi had wasabi under the fish and also there's a mini mountain of wasabi on the plate.
The reason I asked not to put wasabi was that because it's opened by a Japanese person and I thought they'd put the traditional condiment if I hadn't said anything.

Never did I like wasabi in my life and I said one of the staffs that I had asked them to make the sushi without wasabi, then the remade then sushi.

Tuna Roll

When I picked up one, the nori (seaweed) came off.
I think they put too much tuna and the roll became thick but there wasn't enough nori to wrap the rice and fish.
I've never had such a loosely made sushi roll, especially this skinny maki (rolled) type.
The tuna wasn't fishy and the rice was lightly seasoned with sugar and vinegar.

The staff who brought this no-wasabi sushi explained all the kinds, but I don't remember well so the following description could be wrong.
From the left, they're fluke, tuna, yellowtail, salmon, crab and mackerel.
Fluke; I usually don't eat this type of fish but it's plain and good. It may go well with a pinch of salt, too.
Tuna; same as the roll above.
Yellowtail; lightly fatty yet not too rich and had sweetness.
Salmon; it had subtle sweetness and light fat.
Crab; it's one of my favorite sushi/sashimi kind, and it's juicy, sweet and flavorful.
Mackerel; it's topped with green onions which added nice refreshing flavor.

The amount of the rice they put for each fish was little in a good way so that the fish wasn't overpowered by the rice and I could enjoy each seafood's flavor.
And the rice was softly shaped so that it fell apart when I put it in my mouth easily.

Kabocha Tiramisu
Kabocha is pumpkin in Japanese.

It's a tiny tiramisu in a cup which was about 10cm/3.93 inch tall.

I was afraid it'd be pumpkin spice, but actually tiramisu itself didn't use spice but the meringue stick did.

The cocoa powder on the top was unsweetened, and mascarpone had pumpkin flavor but the cheese was so rich that pumpkin flavor was almost hidden.
However the price range wasn't really reasonable, the table was shaky and the sushi roll was rough, and I actually preferred DAMO which is operated by foreigners and cheaper and tasty (or could be tastier).

NYY Steak


ノブ ニューヨークに行ってみたいと思っていたけれど、値段が高く予約も困難だと聞いて
いたため、なかなかノブで和食を食べる機会がなかった。
旦那がお昼ご飯の予約をするため電話をかけると、直近で空いているのが1週間先だった。

ノブ ニューヨークは松久 信幸氏が開店したお店で、新宿2丁目にある「松栄鮨」(現在
閉店)で7年修行した後ペルーで日本食レストランを開店、3年後にブエノス アイレスで
勤務、その後アラスカに自身のお店を出すも火災で失った。
1977年にロサンゼルスでミツワと王将に勤め、1987年に「MATSUHISA」をビバリー
ヒルズで開店し、ロバート・デ・ニーロ氏の誘いにより1993年8月にノブ ニューヨークを
開店した。

予約時間よりも早く着いたけれど席に案内してもらえたのだけれど、そのテーブルは
不安定で旦那が足を置いて支えないといけなかった。
メニューが出された時に、ウィエイトレスが割り箸の袋を外していた。
メニューには魚をさばく人のマークが載っていた。

黒鱈の味噌焼きとライムストーンレタス
2枚のライムストーンレタスに黒鱈の味噌焼きが乗ったものだった。
鱈の上には揚げたワンタンのようなものが乗っていて、揚げ立てで温かくとてもサクサク
していた。
鱈はしっとりし、味噌ダレは甘塩っぱく、焼いた香ばしさがあり美味しかった。

寿司盛り合わせ
さび抜きでと頼んだけれど、最初に出されたものは全てのお寿司にわさびが入っていて、
さらにお皿にはわさびが小さく盛られていた。
最初からさび抜きで頼んだ理由は、ここは日本人が開業したお店なので何も言わないと
私の嫌いなわさびが入っているだろうと思ったからだった。
スタッフにさび抜きで注文したと伝えると作り直してもらえた。

マグロの細巻き

お箸で1個取ると、海苔が剥がれてしまった。
マグロを入れすぎて太くなり、酢飯とマグロを包む海苔が不十分だったのだと思う。
今までこんなに緩く巻かれたお寿司、特に細巻きは初めてだった。
マグロは臭みがなく、酢飯は甘さも酸味もほのかだった。

さび抜きのお皿を持ってきたスタッフが寿司ネタの説明をしてくれたけれど、よく覚えて
いないので、以下に記載する魚の種類は間違っているかもしれない。
左から順番に、ヒラメ、マグロ、ハマチ、鮭、蟹、鯖。
ヒラメ; 普段は頼まないネタだけれど、淡白で美味しかった。塩で食べても美味しい
かもしれない
マグロ; 細巻きと同じ
ハマチ; 少し脂が乗っていてしつこくはなく、甘味があった
鮭; ほんのりと甘く、軽く脂が乗っていた
蟹; 私の好きなネタの1つで、ジューシーで甘く香りも良かった
鯖; ネギが乗っていたので、すっきりした香りを足していた

シャリの量は良い意味で少なく、酢飯の味に邪魔されずに魚の味を楽しむことができた。
また、シャリは柔らかく握られていたので、口に入れると簡単に崩れた。

カボチャ ティラミス
とても小さく10センチ程度のカップに入っていた。
パンプキンスパイスではないかと気になっていたけれど、ティラミス自体にはスパイスは
使われておらず、メレンゲのスティックだけがスパイスの味がした。
1番上のココアパウダーは無糖タイプで、マスカルポーネにカボチャの味がしたものの、
チーズが濃厚でカボチャの味はぼやけていた。

安くはない値段設定の割にはガタガタするテーブルだったり、寿司の巻き方が雑だったり
し、外国人が経営しているDAMOの方が手頃で美味しいと思った。
