The Oldest Hamburger Shop In The States Called "Louis' Lunch"
アメリカで1番古いハンバーガーショップ「ルイーズランチ」

I've recovered a bit and had some appetite, so we decided to go to a famous burger shop "Louis' Lunch" in New Haven, Connecticut.

Here's a short story of Louis' Lunch.
Louis' Lunch was first open in 1895 as a lunch wagon and they say it's the first restaurant to serve hamburgers and steak sandwiches (the latter of which they don't sell anymore) and the oldest hamburger shop which is still in business in the states.

They moved 4 blocks down to 263 Crown Street in 1975, and it's the current location.

Hamburgers are cooked to orders in the restaurant.
They grilled the patties on antique vertical cast iron gas stoves from 1898 and an antique toaster from 1928. 

We got there around 11:50 AM not knowing they would open at noon today, and there're already about 10 people.
As more people started showing up there, they started making a line.
There's a guy in suit who was standing right in front of the door so I thought he's a guard, but not sure.

Next to the operation hours, there's a blue charm which indicates that this is one of the national register of historic places.

At noon sharp, they opened the restaurant and people started flooding in.
As the AC was on, we all had to squeeze in and shut the door as directed by the shop.
Like the outside, interior was so classic that it made me think I traveled to several decades ago.

On the little tables set on the chairs by the wall had a lot of carvings.

Their menus are simple and you should decide what you want before you get to the counter or they'd make you hurry. (It reminded me of Burger Joint.)
Cash only and there's an ATM machine in the shop.

Options for Burgers: Tomatoes or Onions ONLY
Sides: Potato Salad, Chips
Dessert: Coffee, Pie

They also have various beverages.
Over the beverages menu, they make it clear that they're not gonna customize a lot for you.
"This is not Burger King. You don't get it your way.
You take it my way, or you don't get the damn thing."
See? It's a very simple and clear statement.

By the way, the meat would be cooked medium rare, so if you want them to cook more, you need to tell them when you order.

Over the little kitchen, there's a sign of a bottle ketchup crossed out meaning they don't have any ketchup.
And if you ask for ketchup, you're supposedly kicked out, however I'm not sure if it's really true or not.
We ordered one hamburger, one cheeseburger, a potato salad, a bag of chips, and a diet pepsi, and gave them a name.
The total was 20 dollars --- there's no price chart so I don't know exactly how much each item was.

We received a salad, chips, and soda first and waited for the burgers will be ready. 

Potato Salad
First I thought I'd not be able to eat the potato salad, but luckily it didn't contain mayonnaise.
It's mashed potato with hard boiled eggs, black pepper, garlic, parsley and onions.
It's a classic salad but quite good.

While waiting for the burgers, I took some photos in the kitchen after asking permission.
This person was in charge of grilling meat.
He's using a metal turner time to time to cook the meat.
By the wall, there're 3 antique vertical cast iron gas stoves which you can see blue fire.

He's taking orders and handing burgers to the customers.
The white machine behind him towards the right side is the antique toaster, and you can see 2 golden brown toasters at the bottom.

About 15 minutes later after ordering, our burgers were ready so my husband went to the counter and received them.
Paper napkins were set at the counter, so don't forget to grab some on your own.
By the time we started eating, there're many people in the restaurant ordering and waiting without a place to sit.

Hamburger
The top one is a cheeseburger and the bottom is a hamburger.

It's a simple burger; toast, beef patty, onions, tomatoes, and toast.

The patty was medium or close to well done.
When I watching an old video of them getting interviewed, they said they put butter on the toast, but we didn't taste butter and the toast got soggy from the beef juice, so I think they didn't put butter on, at least today.

Without a doubt, it tasted very good as it was and no need to add other condiment like ketchup.


Cheeseburger
It's same as the hamburger except the cheddar cheese spread at the bottom.

Same ingredients; patty, tomatoes and onions.

Cheeseburger had medium rare beef patty and I saw some blood drips on the paper plate.
It's moister, softer, and juicier than that of in the hamburger.

The antique toaster has a metal conveyer so that they can't put cheese on the bread while toasting, thus they put cheese spread on the toasted breads. (only on one side)
Cheeseburger had some saltiness from cheddar cheese spread and tasted different from hamburger.
And the bread with cheese spread prevented the surface from getting wet.

Both were good respectively, so if you're there with more than 2 people, I highly recommend you get both and compare the burgers.
And you won't get disappointed by the amount and the quality of the beef patty; thick and juicy.

少し体調が良くなり食欲も多少出てきたので、ずっと行こうと思っていたコネチカット州
ニューへイヴンにある有名なハンバーガー店「ルイーズランチ」に行ってきた。

ルイーズランチについて。
1895年、ルイーズランチは昼食ワゴン車として開業し、現在も営業しているアメリカで
最も古いハンバーガー屋として知られている。
また、彼らは自分たちが米国で最初にハンバーガーとステーキサンドイッチ(現在は
販売していない)を発売したと宣伝している。
1975年に4ブロック移動し、現在の店舗であるクラウンストリート263に引っ越した。

ハンバーガーは注文を受けてから店内で調理している。
1898年からアンティークの縦型鋳鉄(ちゅうてつ)ガスストーブでパティを調理し、
パン1928年からアンティークのトースターで焼いている。

今日は正午に開店すると知らず、11:50頃お店に着くと既に10人ほどが店舗前に集まって
いた。
その後さらに人が増えたので、皆が列を作り始めた。
ドアの真ん前に男性が立っていたので、ガードマンかと思ったけれど詳細は不明。
営業時間の右側に青色のプレートがかかっていて、ルイーズランチの建物が米国国家
歴史登録材であることを表している。

正午ぴったりに開店し、待っていた人が中へ次々に入っていった。
店内には冷房がかかっていたので、店員の指示通りに店内へ詰めて入りドアをしめた。
外観と同じように内装も古めかしいため、数十年にタイムスリップしたようだった。
壁側にある椅子に取り付けられた小さなテーブルには、沢山の傷(イニシャルなどが
彫られていた)があった。

メニューは非常に簡素なので、注文カウンターに着く前には必ず決めておいた方が良い。
さもなければ急かされる。(バーガージョイントと似ている)
また、支払いは現金のみで、店内奥にはATMが置いてある。

バーガーへのオプション: トマト、タマネギのみ(レタスやマヨネーズは無い)
サイド: ポテトサラダ、ポテトチップス
デザート: コーヒー、パイ

また、飲み物は各種揃っている。
飲み物メニューの上には、このお店ではお客のためにバーガーをカスタマイズしないと
断言しているプレートが置いてある。
「ここはバーガーキングではないので、あなたの好みに合わせたバーガーは出さない。
私たちの出すバーガーを食べるか、そうでなければ(出す物がないので)出て行け。」
とてもシンプルな立ち位置の説明。

また、ビーフパティはメディアムレアで提供されるため、もっと焼いてもらいたい場合は
注文時に伝える必要がある。

小さなキッチンの上にはケチャップに斜線が入ったマークがあり、ここではケチャップは
置いておらず、ケチャップを頼むと追い出されるらしい。←本当かどうかは不明。

私たちはハンバーガー1個、チーズバーガー1個、ポテトサラダ1個、ポテトチップス1袋、
ダイエットペプシ1缶を注文し、名前を伝えた。
値段表がないので各商品がいくらかは分からないけれど、合計は20ドルだった。
ポテトサラダ、チップス、ソーダを受け取り、バーガーが出来上がるのを席で待った。

ポテトサラダ
最初は食べられないと思っていたけれど、このサラダにはマヨネーズが入って
いなかったので食べられた。
マッシュポテト、ゆで卵、黒こしょう、にんにく、パセリ、タマネギが入っていた。
簡単なサラダだけれど美味しかった。

バーガーを待っている間、了承を得てからキッチンの写真を撮らせてもらった。
肉の調理担当だった男性は、金属製のヘラを使用して調理していた。
壁の前にはアンティークの縦型鋳鉄ガスストーブが3台置いてあり、青い炎が見えた。

もう一人の男性は注文を受け、ハンバーガーをお客に渡していた。
壁際には白いアンティークのトースターがあり、機械の受け皿には焼けたトーストが2枚
乗っていた。

注文してから約15分後、ハンバーガーが出来上がったと名前が呼ばれたので、旦那が
カウンターまで取りに行った。
ナプキンはカウンターに備え付けてあるので自分で取る。
バーガーを食べ始める頃には店内は混み、注文したり待ったりしている人で溢れていた。

ハンバーガー
シンプルなバーガーで、トースト、パティ、タマネギ、トマト、トーストの順に積まれて
いた。
このパティはメディアム〜ウェルダンに近かった。
過去のインタビュービデオではトーストにバターを塗っていると言っていたが、バターの
味はせず、肉汁でトーストがぐっしょりしてしまったので、少なくとも今日のトーストには
バターは塗っていないと思う。
ハンバーガーは確かにこのままで十分美味しかったので、ケチャップなどの調味料は
全く必要ないと思った。

チーズバーガー
チェダーチーズスプレッドが塗られている以外は、ハンバーガーと同じ。
チーズバーガーにはちゃんとメディアムレアのビーフパティが挟まれていて、血が紙皿に
垂れていた。
パティはハンバーガーのものよりもしっとりし、柔らかく、ジューシーだった。
回転式のトースターでチーズを乗せて焼くことはできないため、焼き上がってから
チーズスプレッドを塗っている。(片面のみ)
チーズバーガーはチェダーチーズスプレッドの塩気があり、ハンバーガーとは違った味。
また、スプレッドが塗られた方のパンは肉汁で水っぽくならなず良かった。

2種類はそれぞれ美味しかったので、もし2人以上で行く場合は両方とも注文して
食べ比べるのがお勧め。
厚みがありジューシーなパティに、量と質ともに満足するはず。
