Shio Ramen From Ramen-ya Rock 'N' Roll One

I watched several chef David Chang's "The Mind Of A Chef" and one of the episodes was ramen in Japan.
One of the ramen shop was called Ivan Ramen, and they recently opened a ramen shop in Gotham City Market.
Another one was called "69 'N' Roll One" in Machida-city.
In the episode, David Chang explained that in the ramen shop, nobody was allowed to talk and all must eat without chit-chatting and as soon as you finish a bowl, you have to leave.
And some even compared the scene to "Soup Nazi" from "Seinfeld."
Before I left Japan, I saw this ramen shop moved to Akasaka, but didn't get a chance to try the ramen so it's one of my to-dos while I'm back in Tokyo this time.
It's written as "69 'N' Roll One" and it's because that 69 can be read as "rock" in Japanese, thus the sign on the wall appears as "69 'N' Roll One."

Today, I went there around 11:40 AM and there're 2 groups in the shop already.

By the door, there're two vending machines to buy tickets for ramen and other foods and drinks.
When I bought a ticket of Shio Ramen (ramen with salt based soup), a waiter asked me to sit at a counter where he put a glass of water.
Underneath the chair at the counter table, there's a basket to put my coat and bag, and it's very useful.

At the counter, there're little baskets with chopsticks, china spoons and toothpicks.

On the paper napkin holder, it says, "The order to serve ramen may not be consistent depends on the kind. Thank you for your understanding."
And also they would provide disposable chopsticks, paper bibs, wet towel and toothpicks on request, according to the note.
* toothpicks were already set in the little basket thou.

This chandelier was right above the counter and I felt like I was in a bar.

The inside of the shop was very clean and the floor wasn't greasy or slippy at all.
And all the interior was either black or red with white wall and floor.

In about 5 minutes, my Shio Ramen was served.
The visual was very simple and clean without unneeded toppings, and the soup had yuzu scent.
The toppings were chicken char siu, naganegi onion, hot pepper, mianma (bamboo shoots) and mitsuba (Cryptotaenia japonica).

The soup was transparent and first it had yuzu scent, but then I tasted some broth (I tasted fish and some land animal).
It had a good amount of fat but not greasy, also I didn't smell or taste stinky pork so I'm not sure if they use pork in the broth.
I found yuzu peel.

Noodle was thin and straight.
It was cooked al dente, and around noodle, it was very smooth and slippery.
The texture was similar to Somen, Japanese vermicelli noodle made of wheat.

Chicken char siu was moist and juicy.
Thought it's made of white meat, it was really flavorful and when I chew, great broth and sweetness from the chicken filled my mouth.
Over all, I liked this simple but fragrant soup a lot with white meat char siu.
And surprisingly, I heard people talking too, so it's no longer Soup Nazi ramen shop.

Unfortunately I didn't get to see the regent hairstyle owner who appeared on the episode...

前にシェフのデイビッド・チャンの "The Mind Of A Chef" いう番組で日本のラーメン店の
エピソードがあった。
その中には最近ニューヨークのゴッサムシティマーケット(Gotham City Market)にオープンした
アイバン ラーメンもあり、もう一つは町田市にあった「69 'N' Roll One」というお店だった。
その店舗についてデビッド・チャンが「このラーメン店では、黙ってラーメンを食べ、食べ終わったら
すぐにお店を出るのが決まり」と説明していた。
アメリカではその様子が1989年から9年に渡って放送された国民的コメディードラマである
「となりのサインフェルド」に出てくる「スープ・ナチ」というエピソードに例えられたほど。
日本を離れる前、赤坂に店舗が移転したのを知りつつも、行く機会がないままだったので、
今回帰国中に行くことを決めていた。
店舗名の「69 'N' Roll One」は、69=ロックを意味する。

今日お店に着いたのは11:40頃で、先客は4名(2組)。
ドアのすぐそばには、食券機が2台あり、注文したいものを買う。
塩らぁめんの食券を買うと、店員の男性が「水を置いたカウンターにどうぞ」と言って席に
案内してくれた。
カウンター席の椅子の下にはカゴがあり、荷物を入れられて便利だった。

カウンターには小さなカゴが置いてあり、箸、れんげ、爪楊枝が入っていた。
紙ナプキン立てには「注文の内容によっては提供する順番が前後する可能性がある」と
書かれていて、その下には割り箸、紙まえかけ、おしぼり、爪楊枝の用意もあると記載されていた。
* 爪楊枝に関してはすでに小さなカゴにセット済み。

カウンター席の真上にはシャンデリアがあり、バーにいるかのような気分。
店内は非常に綺麗で、ラーメン屋にありがちな油で滑りやすい床とはかけ離れていた。
インテリアは黒と赤のみ、床と壁は白でとてもシンプル。

5分ほどで注文した塩らぁめんが届いた。
シンプルで無駄な物が乗っていない見た目で、スープは柚子の香りがした。
トッピングは鶏チャーシュー、ネギ、唐辛子、メンマ、三つ葉。
スープは透明で、最初は柚子の香りがしたけれど、その後には出汁の味がした。
出汁は魚介と陸の動物の味だった。
油の量もそれなりにあったけれど、あっさりしていて豚の臭みや味がしなかったので、
豚を使っているかは不明
スープには柚子の皮が入っていた。

麺は細め、ストレート。
芯がある茹で具合で、周りはつるっしていて、なんとなく素麺に近い食感。

鶏チャーシューは胸肉で、しっとりとしていて噛むと甘みと旨みが溢れた。

塩らぁめんは税込850円。
シンプルで香りの良いスープが美味しかった。
また、店内で話している人がいたので、この移転先店舗では「黙って食べる」というルールが
存在しないのかもしれない。
残念ながら、本日はリーゼントの店長はお休みとのこと。
