Fairmount Bagel

Montreal bagel is as famous as New York bagel, but they're totally different.
People describe NY style bagels are soft, chewy and doughy while Montreal style is smaller, denser and sweeter.
The essential process to make bagels is to boil before baking, and both styles are the same, and it's to create the chewy surface.
Some say that the NY water is the key to make the bagels tasty, and Montreal style are sweetened as they use water with honey, and this is what I do when I bake bagels at home from scratch (just because I found a recipe requiring honey in the boiling water).

The most famous bagel shop in Montreal is sure to be "Fairmount Bagel" in Mile End area, where was the principal Jewish area until 1950s.

It's opened in 1919 by a Russian immigrant Isadore Shlafman, and they moved the bakery to the current location in 1956 on Fairmount Avenue.

The windows were blocked with sesame seed bagels in bags.

I took this photo from inside of the shop.

A sign was put near the door, and I saw some people left because they didn't have any cash.

Near the counter to place orders, there're 2 glass cases with various kinds of bagels, and on the left side, there're short racks with day old bagels sold very cheap, like 10 for 5 dollars or so.

In the wood-fired oven, they're constantly baking bagels.

I got 2 sesame bagels, which is the most famous kind at Fairmount Bagel I think.
Over Fairmount Bagel, it says, "Pionieer des boulangeries bagel à Montréal" meaning "Montréal's First Bagel Bakery."
As it's a French-speaking region, there's an accent mark when they write Montreal.
Fairmount's O was bagel.

The sesame seed bagels were warm and put in the paper bag tidily.

Compared with NY style bagel, it's skinnier and the hole was much larger while NY style is thicker and fatter with a pinky size hole in the middle.

The height was also shorter than NY style bagel, maybe Montreal style was about 2/3 of NY style.

The bagel was still warm and it's actually my first time to try fresh bagel in my life.
It's lightly crispy and chewy outside, and the inside was soft, fluffy, and moist. 

As it's freshly baked, I didn't think it's that dense like cooled bagels.
I've mostly had room temperature and baked-in-the-morning bagels, and they're usually dried outside and sometimes inside, too, and they require some spread not to choke me, but this bagel was moist and soft, and I just finished the bagel in a short time as it was without any cream cheese or anything.

At the supermarkets, they sell Fairmount Bagels in plastic bags, but the flavor and taste of the fresh bagels are definitely worth the trip to go to the bakery.

モントリオールのベーグルはニューヨークのものと同じくらい有名だけれど、どちらも
全く異なる。
ニューヨーク スタイルのベーグルは「柔らかく、もっちり」、モントリオール スタイルは
「小さめで硬く、甘い」と表現される。
どちらもベーグルを茹でてから焼くという行程は必要不可欠で、これはもっちりとした
表面を作るために行われる。
ニューヨークの水道水がベーグルを美味しくしている言う人もいて、モントリオールは
ハチミツを入れたお湯で茹でることで甘さが足される。
私は家でベーグルを手作りする時は、お湯にハチミツを混ぜているのだけれど、単に
見つけたレシピにそう書かれていたからだった。

モントリオールで1番有名なベーグル屋は、間違いなく「フェアモント ベーグル」だと
思う。
このお店はマイルエンドという地域にあり、ここは1950年代までは主にユダヤ人が居住
していた。

1919年にロシア人移民 Isadore Shalfman が開店し、1956年にフェアモント通りにある
現在の場所に移転した。

白ゴマ付きのベーグルが入った袋が積まれ、窓から中を見るのは不可能だった。
ドアの近くに「現金のみ」と貼り紙があり、何人か現金を持っていなかったので退店する
人がいた。
注文カウンターの近くには2つのガラスケースがあり、様々な種類のベーグルが並べられて
いて、背の低い棚には売れ残りのパンが10個で5ドル程度と格安で販売されていた。

カウンター越しのキッチンでは、たき火のオーブンで継続してベーグルが焼かれていた。
私はフェアもントベーグルで最も有名だと思う白ゴマ付きのベーグルを2個買った。

紙袋には「モントリオールで最初のベーグル ベーカリー」と書かれていた。
フェアモントベーグルの「o」の部分はベーグルがデザインされていた。
中には白ゴマの付いたベーグルが綺麗に2個並べられていた。

ニューヨーク スタイルのベーグルと比べてこのベーグルは細身で、中心の穴も大きめ
だった。(ニューヨークのものは小指ほどの細さの穴)
高さもニューヨークのものと比べて低く、3分の2程度の高さだった。

これは焼きたてだったので、冷えたベーグルのような硬さはなかった。
今までに食べたことがあるベーグルはその日の朝に焼かれて室温になったものが多く、
それらは外側は乾燥し、たまに内側まで乾燥していて、喉に詰まらせないためにも
スプレッドを付けるけれど、これはしっとりと柔らかく、クリームチーズなど何も付けず
にこのままの状態ですぐに完食。

スーパーでもプラスチックの袋に入ったフェアモントベーグルが販売されているけれど、
焼きたてはパン屋に行く価値のある味や香りだった。
