Joël Robuchon Restaurant

My husband has been busy for work and traveling around the world for the last months, and as a reward that I've put up with it, he took me to a Michelin 3-star restaurant, Joël Robuchon in Ebisu.
When my husband made a reservation, he asked for some modification on the food he doesn't eat, and they're very professional and careful about even for small things; for example, I made a request not to use mayonnaise, then they asked me if I could eat egg and oil.

This is taken from Yebisu Garden Place side, and it looked like a castle.

The entrance was on the other side.
The reception was at the first floor and as soon as my husband said the name, a man in a black suit took us to a second (or third?) floor by stairs.

There's a large chandelier in the center.

Our table was set flawlessly.

First they offered some champagne but neither of us drinks, and they said they've got non alcoholic champagne, so we decided to try some.
It's called "So Jennie by Le Momoir des Sacres."

The champagne was light pink and had rose scent, and the bubble was very fine.

They brought menus for each of us and that for my husband had different ingredients from mine.

This huge stick was placed by the door of the room, and first I thought it's a candle which wasn't lit.
However, a server brought it to the table and then I realized it's a tower of butter.

He started carving the butter with two spoons and they looked like roses of butter.
It's unsalted fermented butter.

Then, a plate with olive oil was brought.

Soon a warm baguette was brought.


Amuse-Bouche
Appetizer
There're creamy avocado, radish and red daikon radish.

It's a set of bread they had, and it's hard to choose!
And a server explained all the breads and he mentioned which one contains the certain ingredients that my husband doesn't eat.
We chose some bread and he said he'd warm them up shortly.
While waiting for the bread, they brought soup.


Le Potiron
en velouté glacé relevé d'une huile
Chilled Pumpkin velouté enhanced with oil
It's a cold pumpkin soup with smoked duck that tasted like prosciutto.
It had sweet pumpkin flavor.

I chose a baguette, a rice flour bread, and a butter danish.
The baguette had crispy crust and the inside was soft and moist.
The rice flour bread had some millets and was chewy.
The butter danish was buttery and the surface was crispy.

When we finished the breads, they brought back a set of breads and I chose different ones.
I tried a milk bread and a mini baguette.
The milk bread ha some sweet milk flavor and it's soft and airy.
The mini baguette had more fragrant flavor than the sliced baguette and also tougher.


Le Foie Gras de Canard
avec un ananas rôti à la vanille et rhum ambré, petites meringues à la coco
Sauteed Duck liver served with caramelized pineapple with vanilla and rhum, tiny coconut meringue
Over grilled pineapple, there's a large and thick piece of foie gras topped with vanilla stick and star anise.
Also there're rum and coconut meringues and form.
I'm not a big fan of foie gras so it's actually quite large for me.
However, with pineapple, the characteristic flavor of foie gras became weaker thanks to the sour and fruity taste and I could finish the plate.


Le Bar

Pan fried Sea bass served with a mediterranean condiment and crushed potatoes with rouille sauce
The scale was very crispy and when I cut it, I could hear the crunchy sound.
The flesh was moist and juicy.
The bottom yellow condiment tasted like mix of sweet potato and marron, but not sure exactly what it was.

I was told to take out the skewer first, then they brought a silver finger bowl.
The bowl was sparkly shiny and the water inside was warmed up to body temperature.

* My husband got an alternative dish instead of fish.
L'Epeautre
en risotto onctueux au parmesan et girolles
Organic Spelt wheat cooked like a risotto with girolle mushrooms
It's not rice but spelt wheat risotto with parmesan cheese and mushrooms.
Girolle mushrooms had similar color like pholiota nameko, but they didn't have the jelly over the pileus and had light scent.


Le Porc Ibérique
<<la plume>> caramélisée, polenta onctueuse aux chicons
Roasted Pork served with a soft polenta with parmesan cheese and an endive salad
The meat looked like beef, but they're black Iberian pork.
Outside was roasted crispy and the core was juicy, soft and moist.
There're some popcorns on the mashed potato like sauce, and it's my first time to see any dish with popcorn.

* My husband got a beef dish substitute for the pork.
Le Boeuf

grilled Beef served with seasonal vegetables and a natural gravy
They're lean red meat and horse radish was next to the beef.

After the main, they brought a display of various cheese.

I chose mimolette as I wanted something not too unique or too plain.

There're 6 dried fruits like fig, apricot, cranberry and raison, and I chose fig.
I wish I could try them all but I was too full to try.
The cheese was salty and hard like parmesan and had some deep flavor like cheddar.


Avant Dessert
Pre-dessert
It's a white wine and granita with jelly and muscat.
As a light weight person, the wine was too strong for me.


Le Café
en émulsion avec une crème de mascarpone à la figue et une glace chocolat
Coffee emulsion served with a mascarpone cream, fig and a chocolate ice cream

There're coffee jelly, mascarpone was stored in a thin milk chocolate case, and on the top, there's a chocolate ice cream with gold leaf.
The rock chocolate underneath the chocolate ice cream was popping in the mouth.


Le Café express ou le thé

Express coffee or tea served with petit fours
After the dinner, we had black tea.

They had white sugar and brown sugar wrapped in Robuchon label, and also Sweet'N Low.

Though the course was over, they still had a cart of petit dessert.

I chose a raspberry & cheese, a chocolate and a cream puff.

After paying at the table, they brought a jar of lime candies.

It had "merci" inside.

Since my husband made the reservation, they've been very careful and thoughtful.
And of course at the restaurant, they're the same through the escort, the way the served the dishes and explanations about the dishes as it's easy to see they deserve Michelin 3 stars.

旦那が何ヶ月も仕事と出張で忙しくあまり一緒にいられなかったので、ミシュラン3つ星の
ガストロノミー ジョエル・ロブションに連れて行ってくれた。
予約した際、旦那が食べない食材があるのでメニューの変更を伝えると細かいことにまで
気を遣ってくれ、私がマヨネーズを避けたいと伝えると、卵と油は問題ないかと確認が
あったほど。

恵比寿ガーデンプレイス側から写真を撮ると、お城のようだった。
ちなみに入り口は反対側。
受付が1階にあり、名前を伝えると黒いスーツを着た男性が階段で2階(3階?)へ案内
した。
部屋の中には大きなシャンデリアが真ん中にあり、テーブルがセッティングされていた。

席に着くと飲み物を聞かれ、私たちはお酒を飲まないと伝えると、ノンアルコールの
シャンパンがあると聞いたので飲んでみることにした。
So Jennie by Le Momoir des Sacresというものだった。
シャンパンは少しピンクがかっていて、バラの香りがし、とても繊細な泡だった。

メニュー1部ずつが出され、旦那のメニューは食材を変更したものになっていた。

レストランに入ってすぐの場所に大きな白い塊があり、火がついていないキャンドルかと
思っていたけれど、それがテーブルに運ばれて来た時にバターだと分かった。
男性が2本のスプーンで 器用にバターを削り、バラのようになったものが出された。
これは無塩発酵バター。
さらにオリーブオイルが入ったお皿が出され、すぐに温かいバゲットが出された。

前菜
クリーミーなアボカド、ラディッシュ、赤大根が乗っていた。

沢山の種類のパンが乗ったカートが運ばれてきた。
パンの説明時には、旦那が食べない食材の入った種類を男性が教えてくれた。
パンを選ぶと温めに一度奥へ行っている間、スープが出された。

スープ
冷静のカボチャスープで、鴨のスモークが乗っていた。
鴨は生ハムのような塩気、香りがあり、スープはカボチャの甘みがあった。

最初に選んだ米粉パン、バゲット、バターデニッシュが出された。
米粉パンはもっちりし、雑穀が入っていた。
バゲットは外はカリッとし、中はしっとりふんわり。
バターデニッシュは濃厚なバターの香りがし、外側はサクサク軽かった。

パンを食べ終わると、パンが乗ったお皿が運ばれてきて、次のパンを選んだ。
ミニバゲットはスライスされた最初のバゲットよりも香ばしく、少し固めの食感。
ミルクパンはほんのり牛乳の甘みがあり、ふんわり軽かった。

フォアグラ
グリルしたパイナップルの上に、大きなフォアグラが乗っていて、その上にはバニラ
スティックとスターアニスが飾られていた。
ラムとココナッツのメレンゲ、泡が添えられていた。
私はフォアグラが苦手なので、このサイズはかなり大きく感じた。
パイナップルと一緒に食べると、甘みと酸味でフォアグラ独得の風味が少しごまかされて
なんとか食べ切った。

シーバス
うろこはサクサクに焼かれていて、身はジューシーでふっくらしていた。
シーバスの下に敷かれていた物はサツマイモと栗を混ぜたような味だったけれど、実際に
何だったのかは不明。
刺さっていた棒を最初に抜いてから食べるようにと言われ、すぐにフィンガーボールが
出された。
綺麗に磨かれたシルバーの入れ物で、中の水は人肌ほどに温められていた。

* 旦那には魚料理の代わりに、スペルト麦のリゾットが出された。
あんずたけが乗っていて、色はなめこのようでぬめりはなく、クセのない味だった。

イベリコ豚
牛肉に見えたけれど、これはイベリコ豚のローストで外側がカリッとし、中はしっとり
柔らかく、ジューシーだった。
マッシュポテトのようなソースの上にはポップコーンが乗っていて、ポップコーンが
飾られた料理は初めてだった。

* 旦那には豚の代わりに牛肉が出された。
脂身が少ない赤身のお肉で、ホースラディッシュが添えられていた。

メインが終わるとチーズが何種類も入ったディスプレイが運ばれてきた。
クセが強すぎず、プレーンすぎないハードタイプのミモレットをお願いした。
また、ドライフルーツはイチジク、アプリコット、レーズン、クランベリーなど6種類が
あり、その中からイチジクをお願いした。
パン同様、全部食べてみたかったけれどお腹がいっぱいだったので我慢。
ミモレットはパルメザンチーズのように固めで塩気があり、チェダーのような味がした。

プレデザート
白ワインとゼリー、マスカットが入ったグラニテだった。
お酒の弱い私には、ワインの香りが強すぎた。

カフェ
デザートはコーヒーゼリーの上にマスカルポーネチーズが入った薄いチョコレートの箱、
その上にチョコレートアイスクリームが乗っていて、金箔が飾られていた。
アイスクリームの下にある粒は、口の中でパチパチしていた。

食後に紅茶を飲んだ。
白砂糖とブラウンシュガーはロブションの包み紙で、他にはゼロカロリーの甘味料が
あった。

コース料理は全て終わったけれど、さらに プチデザートの乗ったカートが運ばれてきた。
私はラズベリー&チーズ、チョコレート、シュークリームを選んだ。

テーブルで支払いを済ませると、ライムのキャンディーが入ったケースが運ばれてきた。
飴はフランス語でありがとうを意味する「merci」の文字が入った金太郎飴だった。

予約時からきめ細やかなサービスで、当日もスムーズな案内、料理の説明、 提供、味と、
さすが3つ星レストランといった印象だった。

  1. I remember this building when I first came to Tokyo! I tried their mini baguette and salmon quiche from the bakery at the basement station if I'm not mistaken :)

    1. Yes, they have bakery and they actually serve those breads baked in the shop.
      Baguette x butter = can't be better!
