P.F. Chang's In Stamford

I wanted some American Chinese and we went to P.F. Chang's in Stamford, CT.
The first time I went to P.F. Chang's was in Hawaii back in 2012 and I liked the food and quick service.

The one in Stamford was totally off though.
Very slow and we waited for over an hour to get our food, which were decent.

From Chef's Seasonal Menu, we chose "Vietnamese Lemongrass Chicken Spring Rolls" as an appetizer. 

Lemongrass chicken, julienne carrots, celery, cilantro, peanuts, Thai basil and mint were wrapped in a rice paper.
Sweet chili dipping sauce was served with.
The rice paper was moist and vegetables were crunchy, and the sweet chili sauce had sweetness first but gradually, some spicy and tangy flavor appeared.

For the main, "Sesame Chicken," "Chang's Fried Rice" with vegetables, "Ma Po Tofu," and "Beef A La Sichuan."

Sesame Chicken
It's described as "spicy sesame sauce with broccoli, red bell peppers and onions" but it wasn't spicy at all, just because I like spicy-hot foods and rarely feel the heat from those ones labeled as "spicy" here in the states and in Canada.
Black and white sesame seeds were sprinkled over the dish.
Chickens were all cut into a-bite size, onions and red peppers were cut a bit larger than chickens.
Broccolis were random sizes; small to very large that required a knife to cut.

Chang's Fried Rice (Vegetables)"Tossed in savory soy sauce with egg, julienne carrots, bean sprouts and scallions."
We could choose from vegetables, beef, pork, chicken or combo, and we chose vegetables.
There're also shiitake mushrooms and split peas, and big and small broccolis.
It had fragrant grilled soy sauce flavor.

Ma Po Tofu
"Spicy garlic-red chili sauce with crispy silken tofu, in a ring of fresh steamed broccoli."

This didn't do anything either though it said "spicy."
I'm used to ma po tofu made with regular tofu, so this crispy skin tofu was a bit weird.
The crispy coating caught sauce really well, so that was good.

Beef A La Sichuan
"Fiery pepper sauce wok-tossed with crispy strips of marinated flank steak, julienne carrots and celery."
"Fiery" wasn't true, it had some kick but wasn't spicy.
I think it contained some sprouts of garlic or leeks which look like onion leaks but definitely they're not celery.
It's seasoned strong so that it went well with white rice.

I felt like I had too much broccoli from this dinner --- only Beef A La Sichuan wasn't served with broccoli among mains.
And also I was surprised that each ingredients weren't cut into the same size because it causes unevenly cooked plates and to prepare them in the same dimensions is one of the key of cooking.
Large broccoli was definitely hard to eat due to both the size and some were half raw.

This specific branch is slow as far as the locations I've been to.
The reason it's so slow was "the chef is new," but that's what they need to deal with it.
If you have anything planned out after dinner, you may not wanna go there.

中華ではなくアメリカン・チャイニーズが食べたくなったので、コネチカット州の
スタンフォードにあるピーエフチャンズに行ってきた。
2010年、ハワイで初めてピーエフチャンズに行き、料理の味もよく提供も早かったので
良い印象が強い。

スタンフォードのお店はひどかった。
かなり時間がかかかり、料理を注文してから1時間以上待った。
(料理の味は美味しかった)

シェフの季節のメニューから、「ベトナム風レモングラスチキン春巻き」を注文。
レモングラスチキン(レモングラスと炒めた鶏肉)、ニンジン、セロリ、コリアンダー、
ピーナッツ、バジル、ミントがライスペーパーに巻かれたもので、スイートチリソースが
添えられていた。
ライスペーパーはしっとりしていて野菜もシャキシャキで、スイートチリは甘さだけでは
なく、ピリッとした辛さが後に出てきて美味しかった。

メインは以下の通り。
セサミチキン
「辛い胡麻ソースとブロッコリー、赤パプリカ、タマネギ」と書かれていたけれど、
私は激辛のものが好きなので、こちら(アメリカ、カナダ)で辛いと書かれているものは
ほとんど辛く感じたことがない。
黒胡麻、白胡麻がかけられていた。
鶏肉は一口サイズに切られていて、タマネギと赤パプリカは鶏肉より少し大きかった。
ブロッコリーの大きさは様々で、小さいものからナイフで切る必要がある大きなものまで
あった。

チャンズ フライドライス(野菜)
フライドライス=炒飯のこと。
「卵、ニンジン、モヤシ、エシャロットを香りの良い醤油で炒めた」と書かれていた。
野菜、牛、豚、鶏、ミックスから選べたので、野菜を選んだ。
記載されていた野菜以外に椎茸、さやえんどう、さらに大小ブロッコリーが入っていた。
焼けた醤油の香ばしさがあった。

麻婆豆腐
「ニンニクと赤唐辛子の辛いソースを絡めたサクサクの絹ごし豆腐とブロッコリー」
説明があったけれど、これも全然辛くなかった。
私は普通の豆腐で作られた麻婆豆腐に慣れているため、厚揚げのように豆腐の周りに
衣がついた豆腐で作られていたこの麻婆豆腐は少し妙に感じた。
ただ、衣がついているお蔭でソースをよく吸い、これはこれで美味しかった。

四川風牛肉炒め
「漬け込んだ牛脇腹肉とニンジン、セロリを燃えるように辛い唐辛子ソースを中華鍋で
炒めたもの」と説明があった。
確かに辛さはあったけれど、口から火が出るほど辛くはなかった。
長ネギに似たニンニクの芽かニラのようなものが入っていたけれど、セロリでないことは
確か。
濃いめの味付けだったので、白米と食べると美味しかった。

この日の夕食で、ブロコッリーを大量に食べた気がした。
四川風牛肉炒め以外、メイン料理は全てブロッコリーが入っていた。
また、食材の大きさがバラバラだったのも気になった。
火の通りにムラがでるのを避けるため、食材は同じ大きさに切るのが料理の基本だと
思っていたけれど、ここでは違うらしい。
大きなブロッコリーは大きすぎて、半分生だった部分もあったので言うまでもなく
食べにくかった。

今まで行った店舗の中で、この店舗に限って全てがかなり遅かった。
遅い理由は「料理人が新人だから」とのことだったけれど、それはこのお店の問題なので
どうにかしてもらいたい。
もし夕飯の後に予定がある場合は行かない方が良いと思う。
